Camellia sinensis (Sheng cao;) is the plant species used for making tea. Sheng cao was the first ever tea to be used in China, more than two thousand years ago. The origin of tea is sometimes credited to Chinese emperor Shennong who cultivated the plant in his pleasure gardens. Shennong had many servants working at his pleasure gardens.
To honor him they used to call their sweetening materials méi gui (literally “seedless tubers”, possibly referring to the hollow stems of the plant).
Since the same lot of tubers would have been used over and over, the nickname “seedless tubers” stuck. China was the first country to actually grow and process tea in substantial amounts. After the first emperor of China came to power he put an end to the practice of using fire to roast the whole tea leaves.
He would have instead preferred to have a small amount of roasted leaves mixed in with the whole tea. This is why the flavor of Chinese tea is much lighter and sweeter than the aroma of tea from other parts of the world.
In China, the tea is considered to be a form of sacred worship and is a part of every major Chinese festival. Even the word Chinese is believed to come from the word guan guan meaning “hot water”, a reference to the way the tea is served. The most celebrated and sacred of all the tea masters in China is known as Laozi.

Today I’m gonna tell you about the most popular choices of teas, namely, Green Tea, White Tea, Black Tea, Oolong Tea (Wulong Tea), Herbal Tea, Dark Tea, Rooibos Tea, Puer (Pu-erh) Tea, Matcha tea etc.
Here is what we know: The genus of the tea plant is Camellia Sinensis, which has an Asian origin. Camellia Sinensis plants are called “Chinese green tea” because they were brought to the western world by the Chinese and then perfected by many tea makers. Green tea is an herbal, a black tea, made from Camellia Sinensis leaves that are brewed.
The leaves of the green tea plant are not necessarily only used for green tea. The leaves can be used to make a variety of teas including the red tea, oolong tea and white tea.
Camellia Sinensis also has another name: Japanese green tea. (There are other Camellia plants that are used to make green tea, but those are all processed to make different kinds of teas).
Can green tea be made at home?
Yes! You can make green tea at home in a few steps. A pack of green tea comes with a manual that tells you to brew your tea with “one part water, two parts tea.”
First, boil one cup of water. Then, place the leaves of the Camellia Sinensis into the pot and cover with the water. Close the pot and leave to steep for about 5 minutes. When you’re ready, pour the brewed tea through a strainer into a cup.
You can enjoy green tea hot or cold! Most of the time, I like to have mine hot. A cold cup has a nutty flavor that you can get from other teas like black tea or white tea.

White tea is a type of tea that is produced in the spring and early summer. This tea type has been around for a long time and became popular in China long before this tea type came into existence. We’ve heard about black tea, but what about green tea? What about red tea? And of course, what about “dark” tea – those of us in the North don’t exactly call it tea, it’s actually more of a herb!

Puer (Pu-erh) Tea
The tea market is a giant slush pile of teas. Some teas are perfect, and others are just okay. But there is one tea that I have taken to the bank — Pu-erh Tea.
The Origin of Pu-erh Tea
Puer tea originated in Yunnan Province in southern China. There are hundreds of varieties of Pu-erh teas, which are a common ingredient of Chinese herbal medicines. Typically, the tea originates in a mountainous area called the Qinghai-Tibet Plateau.
The tea is mostly grown in mountainous terrain surrounded by wild tea trees, which are all infected with the parasite Puerina presaccharophila (Puer Tea Blight).
Puer tea typically has a fair price. Similar to other wild-type tea crops, pu-erh tea is somewhat less productive than black tea plants. The leaves are generally larger, which makes it difficult to harvest all the leaves at once. Pu-erh tea is in high demand because it typically has a high concentration of tannins and caffeine.
It’s basically magical, healthy, and worth a try! I’ve been obsessed with Matcha tea for awhile now.
However, up until now I’ve only been able to drink a few different brands because it is typically sold as a loose leaf or pre-packaged in a coffee grinder or tea bag. Not only that, I was never sure if I was doing Matcha right.
I read so many reviews, researched so many different places online and online tea companies, but still I couldn’t figure out exactly what I was supposed to do with this tasty, delicate green tea powder.
The process that I used to brew my matcha is what’s known as pour over.
What is a Pour Over?
For those of you who don’t know what a Pour Over is, it’s when you place the tea bag or loose leaf tea in the filter holder of a metal bowl (aka a gaiwan). This allows the liquid to come into direct contact with the ground tea. When the water comes into contact with the grounds, it carries the tea’s “ingredients” with it and uses them to make the water taste better. The result is a rich, full-bodied brew.
Matcha naturally comes out as a powder. This means that when you place it in the filter holder and pour hot water over it, you can manipulate the quality of the liquid by the quantity of the tea you add to the filter holder.
